Title: Application of HACCP on a Mechanically Processed Gum Arabic

Abstract: The main objective of this research is to study the application of HACCP system in order to enhance the manufacturing of a sound competitive mechanically processed gum Arabic in Sudan instead of exporting a raw material, which needs further processing. It is known, by the stakeholders involved in this subsector, that some European and American companies are monopolizing the processing, normally by spray drying, of this product for which Sudan is the first producer. In order to break this circle, the current research on hazard analysis and critical control points HACCP application to mechanically processed gum Arabic was conducted. HACCP is a preventive systematic approach used in food and pharmaceutical industries to ensure an excellent quality of manufactured products. It is worth mentioning that HACCP is widely used in the developed countries and it is almost mandatory to most of the food industries. Applying this preventive quality system on the gum Arabic manufacturing would, with no doubt, enhance its reputation as an international commodity and help in its marketing campaigns. During this research the HACCP was applied on gum Arabic during its different processing stages starting from tapping and collection all through the initial cleaning on site, storage, manual cleaning inside the plant, metal detection, automatic cleaning, air blowing, milling, grading, farther milling to powder, weighing and packing. The methodology practiced includes an experimental work on each step by comparing actual obtained results against standards o f SSMO. This research would pave the way for the application of HACCP through its application on the selected case study of Savanna gum Arabic manufacture plant. The plant produces kibbled gum and some other further processed products that will benefit from the application of this system and the culture will be spread to other factories in Sudan. It is recommended to conduct further research on HACCP application to endogenous Sudanese manufactured products
