Title: Proximate Composition Anti Nutritional Factors And Protein Fractions Of Sorghums(Sorghum Bicolor (L.) Moench)

Abstract: In this study four sorghum lines namely line um banin, line 5-4-5, line 16-34 and line 6-9-10 obtained from department of agronomy- faculty of agriculture- university of khartoum were used. The proximate analysis of these lines showed that the moisture content ranged from 6.37% to 6.67%, ash content ranged from 1.77 to 1.96%, protein content ranged from 12.24 to 13.67%, fat content ranged from 3.12 to 3.97%, fiber content ranged from 1.19 to 1.81% and carbohydrate content ranged from 72.31 – 73.88%. Tannin and phytic acid were anti nutritional factors present in sorghum. Results obtained showed that tannin content ranged from 0.01 to 0.30%. These values can be considered as low tannin content. Phytic acid content ranged from 238.82 to 326.12 mg/100g. Protein solubility fraction for these lines showed values for the albumin fraction ranged from 12.66 to 14.04%, globulin ranged from 6.47 to 9.35%, prolamin ranged from 32.64 to 43.93%, glutelin ranged from 24.43 to 32.46% and the insoluble protein fraction range from 2.61 to 5.43%. Results showed that prolamin and glutelin are the principal protein fractions in sorghum protein.
