dc.description.abstract The purpose of this study was to assess the meat hygiene and meat inspection programmes practice in the Sudan. The study gives a fairly elaborate account of the administration of animals, practices of inspection, transportation of meat hygiene including the marketing of animals, transportation of meat and supervision of markets. The objectives of good meat hygiene practice are to prevent transmission of disease to man by providing him with safe, wholesome meat and meat products, to reduce losses in meat and its by-products and to prevent diseases transmission between domestic animals. To measure the extent to which meat hygiene objectives are fulfilled in the Sudan, the study started with the animal markets and analysed the inflow and sale when compared with slaughtered animals. It appeared that there is poor control on animal markets and animal marketing. The means of transportation including, railways, hoof and truck transportation were investigated. It was found that they were predisposing factors for disease transmission, loss of weight and adverse effect on the meat quality. It was found that there is a peculiar relationship between the animal distribution in the Sudan and the slaughter houses distribution. The major slaughter houses were constructed in highly populated areas. In the mean, these have very few meat producing animals. This created the problems of livestock transportation from the animal production areas to the areas of consumption. It was also found that most of the slaughter houses work beyond their working capacity. Meanwhile the slaughter houses were in bad condition and are run under very loose administration. The weak control of the animal markets, meat markets and the slaughter houses encouraged illegal slaughtering. The meat inspection procedures and practices were investigated. It was found that meat hygiene practices in the Sudan have many defects which need to be corrected. The administration of meat inspection was studied according to structure in this sequence: 1. The administration of the slaughter houses, both regional and central. 2. The administration of slaughter houses as part of the administration of animal resources authorities. 3. The administration of animal resources according to function. 4. The slaughter houses reports as part of the general reports of veterinary service administration. It was found that the division of responsibility of meat hygiene supervision among government departments is not clearly underlined.
