Title: A Biochemical Study on the Effectiveness and Feasibility of a Simple Solar Box Cooker (SBC) on the Acceptability of Selected Faba Bean Cultivars

Abstract: An inclined solar box cooker (SBC) assembled from local materials was used. Its registered maximum plate temperature attained was in the vicinity of 171.8°C. The cooker conveniently secured a high optical efficiency, a low heat loss factor and a good heat exchange factor as well. The effects of loading, tracking, openings and removal intervals on SBC were all looked in depth. The ambient, load and plate temperatures and radiation intensity were continously recorded with breaks. Three varieties of faba bean sun-dried seeds (Hudieba 93, English and 0070 Shambat) were completely cooked in the SBC with or without soaking in various salt mixtures. The cooking times obtained ranged between 120 and 195 mins. Data collated place Shambat variety as premiere in organoleptic attributes. Moreover, it obtained the least cooking time. Flavor enhancing soaking solutions were sodium chloride and sodium carbonate, but soaking in sodium bicarbonate and sodium carbonate resulted in good texture.
