Title: Effect of inoculation with Rhizobium on the seed chemical and physical properties of legumes

Abstract: The effect of inoculation with Rhizobium on the physical and chemical properties of legume seeds was reviewed. Inoculation significantly increased the protein content and significantly decreased the carbohydrates content of the seed of faba bean, chickpea, fenugreek, guar, soybean and groundnut. In most reports, Rhizobium inoculation significantly increased the in vitro protein digestibility and decreased the anti-nutritional factors. Properties such as moisture, fat, crude fiber, mineral composition, yield, 100 seed weight, total seed defect, hydration coefficient and cookability were found to vary with the type of Rhizobium strain, crop, cultivar and other fertilization treatments.
