Abstract: Background: Foodborne illness is a significant public health problem with major economic and social effects. , approximately 30% of healthy people are carrier of Staphylococci, and it is one of the most important food poisoning bacteria. This study was carried out to identify negative coagulase Staphylococcus contaminating Homemade Mayonnaise in restaurants. Study design was a descriptive cross sectional study, study area Omdurman locality, lying on the western banks of the River Nile, opposite the capital Khartoum., Khartoum State, Sudan. Objective: The study was carried out to Isolate and Identifythe coagulasenegative Staphylococcusfromhome-made mayonnaise in Omdurman Locality Restaurants. Methodology: Eighty seven sample were randomly collected from Omdurman locality Restaurants the samples were collected in three different times, surrounding temperature ranging from 36 - 38 C° and subjected to microbiological analysis, through standard bacteriological producers. Results: Prevalence of Staphylococcus isolated from all samples was 33.3%.The specieswere identified as Staphylococcus sciuri (34.4%).Staphylococcus caseolyticus (13.7%).Staphylococcus saprophyticus (10.3%).Staphylococcus pulveriri (10.3%).Staphylococcus arlettae (6.8%).Staphylococcus carnosus (6.8%).Staphylococcus lentus (6.8%),Staphylococcusgallinarum (6.8%) and Staphylococcus xylosus (3.4%). Conclusion: Home-made mayonnaise was contaminated by coagulase negative Staphylococcusspecies.Therefore more attention is required to apply intensive hygienic measures towarrantyconsumer safety.
