Abstract: Meat nationally and internationally is the most nourishing and biggest food commodity, yet could easily spoil or carry very serious diseases to human, through many contaminating hazards especially microorganisms. Enterobacteriacae (Escherichia, Salmonella, Klebsiella, Shigella) and Staphylococci other than being pathogenic are usually considered by health authorities as critical indicators to food hygiene.
