Abstract
Water is a vital necessity of life, without which man can only live for some few days. It forms about ٧٠٪ of the body weight. This research had been conducted in year ٢٠٠٥ at Northern Administration Unit -Khartoum Locality restaurants . . The study aim was to assess the water microbilogical quality in restaurants , in addition to identification water handling practices , the enforcement of environmental health law regarding restaurants water quality and identification the general hygiene in restaurants personal, premises,faclities…..etc . The data were collected using structured interview (questionnaire , observation ) and experimental examination for water samples collected from water containers . According to bacteriological analysis, the study revealed that (٤٢٫٩٪) of the examined water samples were contaminated by Thermotoleramts and these were due to : ١. The method of handling drinking water . ٢. Uncovered barrels exposure to the dust & microorganisms . Finally study recommended, encouraging community participation and intervention should be made for raising the awareness of restaurants worker through intensive health education programme and application of health standards in restaurants and enforcement of public health act towards the restaurants and regarding the medical examination for employees this should be conducted periodically every three months and application of sanitary measures in the design and manufacture of water storage containers and to see to it that these containers are kept clean & covered
