Yield and Some Quality Indices of Fish Transported from Upper Nile

Abstract
The bulk of commercial fish reaches Khartoum market mainly from the Upper Nile area. This study addressed yield and quality changes of some transported commercial fish. The percentage of the total weight loss for fish that reached the market ranged between 9.7 to 21.4%. The percentage of the deteriorated fish (Rojor) ranged between 2.1 to 11.6%. The Fish: ice ratio was 1:1.4 to 1:2.5. There was a highly positive correlation between the quantity of fish in the field and in the market; between the amount of fish produced and the weight of the deteriorated fish and the quantity of ice used for preservation. Chemical, physical and microbiological analysis were carried out for the dominant commercial species of fish (Tilapia spp., Heterotis niloticus and Distichodus spp. during the period of the study. The chemical composition of the fish flesh included moisture that ranged from 52.5 to 55.4, ash from 1.6 to 2.3, protein from 29.9 to 32.9 and fat from 4.6 to 6.48. Hunter colour measurements showed that lightness ranged from 28.4 to 35.1, redness ranged from 8.8 to 13.2 and yellowness from 4.06 to 5.9. Bacterial count was 4.1 x 106 Cfu / gm in Tilapia 2.5 x 106 Cfu / gm in Heterotis niloticus and 1.6 x 106 Cfu / gm in Distichodus.
